Chocolate truffles are very easy and super fast to prepare, just a handful of ingredients…..it is a simple chocolate ganache.
Luscious, fudgy, and rich, the truffles can be customized following your favorite flavors or following your fantasy.
The truffles are a lovely gift or after-dinner treat when entertaining.
Perfect homemade gift for any occasion.

Ingredients

Dark chocolate ganache

  • 2/3 cup less 1 tsp 8150 g) whipping cream (35% fat)
  • 5.5 oz (150 g) dark chocolate 70% cocoa solids, Guanaja Valrhona
  • 1/2 tbsp (honey)
  • 3.5 tbsp (52 g) unsalted cold butter, cubed

Extra

  • Cocoa powder Cacao amaro
  • Shredded coconut
  • Finely chopped hazelnuts

Instructions

    Finely chopped the chocolate and set aside. I ssuggest you to use a kitchen scale.

    In a small saucepan, heat the cream with honey until 176F - 80°C.

    Pour the hot cream over the chocolate and let the warm cream and chocolate sit in the bowl for a few minutes. 

    Then blends with a hand blender until silky and smooth.

    When the ganache reaches about 122F - 50°C, add the cubed butter and blends once again.

    Pour the obtained ganache into a jar and fill a silicon 1,2 inches half spheres mold, 1,2 inches (3 cm in diameter).

    Smooth the surface with an offset spatula, cover with plastic wrap touching the surface and  refrigerate until the mixture is set, for at least 2 hours.

    Then, remove the semi-spheres, sandwich them, and passing your index finger over the joint, seal them perfectly together.

    Coat in toppings like cocoa powder, nuts or shredded coconut.

    Store in the fridge.

    I suggest you to leave the truffles room temperature 5 minutes before serving

    Notes

    You can flavor the whipping cream as you prefer: orange, vanilla, lemon, spices, coffee and so on.
