Homemade burger buns really make all the difference.
These buns are incredibly fast, easy and delicious!
These brioche-like buns are light in texture and high in flavour.
They are soft, pillowy and perfect for burgers and not only.


In the bowl of a stand mixer fitted with hook attachment, place the sifted flours, the yeast, the sugar and the egg and start kneading on low speed.Burger buns

Gradually add the milk, increase the speed and knead for about 10 minutes on medium high speed until you get a smooth dough.
Gradually add salt, then the butter and continue to knead until completely incorporated.
Grease a mixing bowl, place the dough inside, cover with cling film and refrigerate for about 8/12 hours.
Then, remove the dough from the fridge and let sit room temperature for about 60 minutes.
Pour the dough on the bench, fold the dough with your hands a couple of times (fold a portion of the dough up and over itself toward the center of the dough, turn the dough and repeat).
Cover the dough with the bowl and let sit for about 20 minutes.
Shape the dough into a log and get small balls about 110 g each.
Place the buns on 2 baking trays and let rise until double in size.
Heat fan oven at 340F - 170°C.
Brush the surface of the buns with beaten whole egg, sprinkle with sesame seeds and bake fo 22 minutes.
Out of the oven, place the buns on a rack to cool completely.
