So, here’s a delicious cherry, chocolate and pistachio loaf cake.
Fast and easy to prepare, easy to carry, maybe for an outdoor lunch or dinner with friends or for a snack in the garden with children and parents.

Cherries, chocolate chips and pistachios loaf cake

Ingredients

Loaf cake batter

  • 5 tbsp (70 g) soft unsalted butter
  • 1/2 cup + 1 tbsp + 2 tsp (125 g) superfine granulated sugar
  • 2 medium (100 g) whole eggs, room temperature
  • 1/2 cup (65 g) pastry flour
  • 2.7 g baking powder
  • A generous pinch of salt
  • 2 oz (55 g) shelled and finely chopped pistachios
  • 3.5 oz (100 g) pitted cherries
  • 1/3 cup less 1 tsp (50 g) dark chocolate chips, 70% cocoa solids, cold from the fridge

  • Snow sugar
  • Finely chopped pistachios
  • Neutral glaze
  • Fresh cherries

Instructions

    The batter and to bake

    I suggest you to use a kitchen scale to weigh the ingredients and a precision digital scale for the baking powder.

    The day ahead or a few hours in advance, wash the cherries and remove the pits.  

    Cut into 4/6 parts and then pat them dry and place the chocolate chips in the fridge.

    Heat fan oven at 300F - 150°C.

    Grease (or butter and flour) a loaf cake mould 7x3x3 inches (18x8x8 cm) and set aside.

    In the bowl of stand mixer, with a paddle attachment, beat the butter and sugar on medium/high speed for about 5 minutes (5/6 Kitchen aid).

    Add in 4 batches the lightly beaten whole eggs and combine, scraping down the sides when needed.

    Add the sifted flour, baking powder and salt and mix with a spatula until fully combined.

    Then, add the cherries, the pistachios and chocolate chips and mix until completely incorporated.

    Pour all the batter (510/520 g) inside the prepared mould, smooth the surface with a spatula and bake for 60 minutes, on the II level from the bottom.

    Reverse the cake on a silicone mat and let completely cool, room temperature.

    To serve

    Using a 2 cm wide strip baking paper on the cake, dust with snow sugar.

    Brush the center of the cake with neutral glaze, garnish with finely chopped pistachios and a fresh cherry.
